RECIPES

SHRIMP WITH ORZO AND ROASTED VEGGIES

Ingredients:

-1 ½ pounds peeled & deveined shrimp

-1 Red Pepper

-1 Yellow Pepper

-1 Zucchini

-1 Red Onion

-2 Garlic Cloves, mince-Salt & Pepper to taste

-1 Tablespoon Butter

-½ Pound Orzo

-1 Bunch Scallions, minced

-Feta, small package

-Fresh Basil for garnish

Directions:

  • Preheat oven to 425 degrees.
  • Toss the bell peppers, zucchini, onion and garlic with olive oil, saltand pepper on a large baking sheet.
  • Roast for 40 minutes turning vegies so they don’t burn. (An air fryer works great too! It takes about 10 minutes or so.)
  • Heat a skillet over medium high heat and cook the shrimp in a tablespoon of butter and olive oil along with some minced garlic.
  • Cook for about a minute or so per side turning to cook evenly.
  • When shrimp turn pink, they’re done.
  • Remove from pan and place on top of pasta.
  • Garnish with scallions, crumbled feta and fresh basil.
  • Serve with a toasty baguette. Enjoy!

CRAB CAKES WITH SUMMER CORN SALAD

Ingredients:

-2 packages Lump Crab Cakes from Motts Channel Seafood

-4 ears of corn

-1 cup grape tomatoes (halved)

-1 English cucumber, thinly sliced

-1 small red onion, diced

-3 tbsp fresh parsley, chopped

-2 tbsp fresh basil, chopped

-2 tbsp crumbled feta

Dressing:

-¼ cup olive oil1

-½ tbsp red wine vinegar

-1 tbsp lemon juice

-1 ½ tsp honey

-½ tsp minced garlic

-½ tsp each salt and pepper.

Directions:

For the salad

  • Bring a large pot of water to a boil.
  • Have a large bowl of ice water ready nearby.
  • Once water boils add corn and cook for 3 minutes.
  • Transfer to ice bath to cool.
  • Cut kernels from corn and transfer to a large bowl.
  • Add tomatoes, cucumber, red onion, feta, parsley, and basil.
  • Whisk dressing and pour over salad.

For the crab cakes

  • Heat a skillet over medium high heat with 2 tbsp butter and 2 tbsp olive oil.
  • Add crab cakes to skillet and cook until browned on each side, flipping once, about 2-3 minutes per side.
  • Serve with garlic bread for a delicious summertime meal. Enjoy!

Shrimp Burgers with asian slaw & SIRACHA AIOLI WITH A SIDE OF SWEET POTATO FRIES

Ingredients:

– Peeled and Deveined Shrimp

– Flour to Bind Shrimp Burger

– Salt and Pepper to Taste

– Mott’s Channel Seasoning to Taste

– 2Tbs Olive Oil

– 1 Tbs Butter

– 4 Brioche Buns-Toasted

– Siracha Aioli

– Asian Slaw (Bagged Salad)

– 2 Sweet Potatoes, Sliced for Sweet Potato Fries

Directions:

  • Chop shrimp into very fine pieces, add flour as needed to bond into a patty.
  • Season shrimp burger patties with salt/pepper & seasoning to taste.
  • Heat oil/butter in a skillet on medium heat.
  • Brown shrimp burger on both sides until golden, about 2 minutes per side.
  • Preheat oven to 400 degrees.
  • Bake sliced sweet potatoes for 30 minutes, turning once on a greased baking sheet.
  • Season with salt & pepper.
  • Serve shrimp burger on a toasted brioche bun topped with Asian slaw and aioli with sweet potato fries on the side.

Roasted Red Pepper Mahi with Roasted Corn

Ingredients:

– Mahi fillets

– 1 Bag of frozen (or fresh if in season)

– 1 Cup of heavy cream

– 1 Jar of roasted red peppers – chopped

– 1 Large head of broccoli – steamed

– ¼ Cup lemon juice

– 1 French baguette

– 1 Tbs of minced garlic

– 2 Tbs of olive oil

– 1 lemon

– 2 Tbs butter

– Salt

Directions:

  • Pat mahi fillets dry and season with salt/pepper
  • Heat small skillet on medium heat add butter and corn and cook for about 10 minutes until corn is golden
  • Meanwhile, heat another skillet on medium heat
  • Add olive oil
  • Add the mahi
  • Cook about 3-4 minutes then flip and cook another 3-4 minutes
  • Fish is done when it starts flaking with a fork
  • In a small saucepan add heavy cream, roasted red peppers, minced garlic, lemon juice and salt.
  • Bring ingredients to a boil, then reduce to a simmer, stirring frequently
  • Sauce will reduce to about half
  • Plate corn, add mahi on top then spoon sauce over mahi
  • Serve with steamed broccoli and French bread
