GREAT SUMMER RECIPES USING FRESH SEAFOOD

Summer is a wonderful time to enjoy fresh seafood, especially after a long day on the beach or boat!

Here are some delicious summer recipes featuring fresh seafood found at Motts Channel Seafood:
Grilled Shrimp Skewers: Marinate large shrimp in a mixture of olive oil, lemon juice, garlic, and your favorite herbs. Skewer the shrimp and grill until they turn pink and slightly charred. Serve them with a squeeze of fresh lemon juice and a sprinkle of chopped parsley.

Seared Tuna Salad: Sear fresh tuna steaks in a hot skillet for a minute on each side, leaving the center rare. Slice the seared tuna and arrange it over a bed of mixed greens. Add cherry tomatoes, sliced cucumbers, red onions, and drizzle with a citrus vinaigrette.

Grilled Salmon with Mango Salsa: Season salmon fillets with salt, pepper, and a squeeze of lime juice. Grill the salmon until it’s cooked through and slightly crispy on the outside. Serve with a fresh mango salsa made of diced mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and a pinch of salt.

Steamed Clams in White Wine: Sauté minced garlic and shallots in olive oil until fragrant. Add fresh clams and pour in a cup of white wine. Cover and steam until the clams open up. Discard any clams that don’t open. Serve the clams in their broth with crusty bread on the side.

Ceviche: In a bowl, combine diced fresh fish (such as tilapia, snapper or tuna) with lime juice, diced tomatoes, red onions, jalapeño, cilantro, and a pinch of salt. Let it marinate in the refrigerator for at least 30 minutes or until the fish is opaque and “cooked” by the acid in the lime juice. Serve with tortilla chips.

Grilled Lobster Tails: Split lobster tails lengthwise, brush them with melted butter, and season with salt, pepper, and a squeeze of lemon juice. Grill the lobster tails flesh-side down until they’re opaque and cooked through. Serve with additional melted butter and lemon wedges.
